One year. One fish at a time.

A year ago we opened the counter at Omakase Amsterdam in De Pijp. This film is about the question that shaped everything since: do we know where our tuna comes from?

The Tuna Film follows our bluefin from Fuentes in Cartagena, Spain — the people who raise, catch and cut it — to Versvishandel Jan van As in Amsterdam, and finally to the dry-aging cabinet behind our counter, where the fish becomes the sixteen courses we serve every evening. Twelve minutes, one year, one fish at a time.

It is also why we host our tuna festivals: when you see a whole bluefin broken down in front of you, you understand it differently.
