Building a Temple.
In Japan, the greatest sushi restaurants are not called restaurants. They are called temples — places shaped by repetition, restraint and devotion to a single craft. A year ago we opened our counter in De Pijp with one question: what does it take to become a temple?
Building a Temple follows our first year through the fish that shaped it: the bluefin farms of Cartagena, Spain — home of Ricardo Fuentes e Hijos — where a 600kg tuna was caught on camera; Versvishandel Jan van As in Amsterdam, who helped us bring in a record-breaking 338kg whole tuna that cracked our floor; and the dry-aging cabinet behind our counter, where patience does the final work.
Twelve minutes. One year. One fish at a time.
